Where bleating is music to the ears
Weizer Schafbauern greets visitors to its website with a hearty “maa”. And it’s no joke. To this farming cooperative from the Austrian region of eastern Styria, sheep are more than just the producers’ capital. They symbolise a passion for stockbreeding, a love of organic farming and a dedication to products which are as close to nature as possible.
A taste for eco-friendly products
These days, being eco-friendly means taking a sustainable approach across the board: protecting the environment, allowing animals to express their natural behaviour and conserving resources are just some of the main points to consider. It is worth making the effort though because products manufactured with a respectful ethos and great care offer above-average quality and promise superior flavour.
You are what you eat
The Weizer Schafbauern farmers believe this is true of both man and beast, which is why they let their small herds graze in the intact environment of the Weiz highland pastures. There, the sheep eat tasty grass and herbs – fresh in the summer and as hay in winter. This nutritious diet is the basis for excellent cheese products. While they’re grazing, the four-legged gardeners also help to maintain the stunning landscape dominated by small-scale farming.

S'Würzige Schaf
A soft, red-smear cheese with a mildly tangy flavour, made from GM-free pasteurised sheep’s milk with its natural fat content. This young cheese is ripened for 10 to 14 days.
Weizer Bergschaf Reserve
An aromatic hard cheese with a slightly tangy flavour, made from GM-free pasteurised sheep’s milk with its natural fat content. The cheese is treated with a red smear culture and ripened for up to a year.
