Officers replaced by Comté
The young wheels of Juraflore mature in an extraordinary place: Fort des Rousses in the heart of the Haut-Jura regional park, 1,150 metres above sea level. 3,500 soldiers were once stationed at this former fortress. Now, this impressive landmark offers exceptional ripening conditions for more than 100,000 Comté cheeses.
Shhh, the cheese is ripening
The affineur “listens” to his cheese. He tests each Comté with a cheese drill to assess its ripeness and its potential for further ripening. Regularly checking and monitoring the cheese is crucial because only a few wheels complete the full three-year maturation process in the care of an experienced affineur.
Inspiring Paris
The city on the Seine has inspired countless artists to date – including Charles Arnaud. In the 1930s, this master affineur parked his truck outside the famous Café de Flore in Saint-Germain. He was inspired by (and outside) this café, and the legend of “Juraflore” was born.
Precious secret
Ever since it was established in 1907, the values of Fromagerie Arnaud, the company’s traditions and the art of cheesemaking have been handed down from generation to generation. Jean-Charles Arnaud is the current custodian of this legacy. He will keep the precious secrets of making and ripening Juraflore until it is time to pass them on to his successor.

Fruity and tangy, this cheese reflects the many herbs that grow in the Alpine pastures of the French Jura Mountains. Ripened for up to 30 months.
Juraflore Morbier A.O.P.
This semi-hard, unpasteurised cheese from the French Jura Mountains traditionally has a layer of vegetable ash. It boasts a creamy texture and a full-bodied flavour.
